Hearty Pizza-muffins

Hearty pizza-muffins - they're vegan, extremely yummy and the perfect snack to bring to a party!

Ingredients
  

Fry:

  • 1 Tbsp olive oil
  • 100 g smoked tofu
  • 1 big onion 100g, finely chopped

Dry ingredients:

Rest of ingredients:

  • 2 Tbsp tomato paste
  • 3 Tbsp olive oil
  • 3 Tbsp soy yoghurt
  • 300 ml water
  • 60 g olives from the jar
  • 50 g dried tomatoes

Instructions
 

  • Preheat oven to 180°C, circulation
  • dice onions and smoked tofu and fry both in a pan with a little olive oil for 7 minutes. Take the pan from the stove and put away for now.
  • Quarter the olives and cut the dried tomatoes into little pieces. 
  • Mix the dry ingredients in a bowl.
  • Mix tomato paste, olive oil, soy yoghurt and water in a little bowl, add the dry ingredients and knead to a dough.
  • Add olives, dried tomatoes and onions with the smoked tofu to the dough.
  • Put the dough in baking forms or into a glazed muffin form.
  • Bake in the oven for 30 minutes.

Notes

If you want, you can add vegan cheese melt as a topping.
