Colourful Couscous

This Colorful Couscous recipe is for you if you're looking for a meal that is done in no time but still brings lots of colour to your plate.

- 250 g Couscous
- 3 dl boiling water
- 1 tsp vegetable broth powder
- 2 tbsp olive oil
- 1 large onion diced
- 1 carrot diced
- 1 bell pepper sliced
- 1/2 fennel diced
- Optional: garlic or any other veggies you've got around & wanna use
- 1 tsp salt
- 1 tsp cayenne pepper or more
- Optional: Mint leaves coriander/cilantro, pomegranate seeds
Boil water, add vegetable broth powder. Pour over couscous. Let swell for 5 to 10 minutes.
In the meantime sauté onion in olive oil for a few minutes & then add veggies & spices. Fry for a few more minutes.
Add couscous to frying pan and combine.
Top with herbs and seeds of your choice.
