Apple Celery Salad

Perfect as a winter season salad.

Servings 4 portions (when served as a starter)

Ingredients
  

  • 200 g celery
  • 2 small or 1 large apple
  • 4 tbsp coconut milk
  • 3 tbsp apple cider vinegar alternatively use a different vinegar or lemon juice
  • 1 tbsp canola oil
  • 1-2 tsp mustard
  • pinch of salt
  • 80 g walnuts

Instructions
 

  • Peal and grate celery & place in a salad bowl.
  • Cut apples into small cubes and add to the bowl.
  • Prepare salad sauce by combining and mixing coconut milk, vinegar, oil, mustard and spices together.
  • Pour salad sauce over the celery and apples and mix all together.
  • Serve and ENJOY :)

Notes

Best served as a starter with some leaves of lettuce.
