Easy Vegan Lemon Lemon Pudding

The preparation of this refreshing dessert is as quick as easy and does not take longer than 15 minutes. My recipe for this easy vegan lemon pudding does not use refined sugar, but Stevia. A refreshing and light dessert ideal for anyone who likes it uncomplicated, but delicious.

Ingredients
  

  • 400 ml coconut milk
  • 200 ml soy drink
  • 3-4 Tbsp Stevia sugar
  • 80 ml lemon juice freshly squeezed from 2 lemons
  • 50 g corn starch

Instructions
 

  • Mix all ingredients in a pot. Heat up while stirring and bring to a boil for a few minutes.
  • Let the cream cool down slightly before serving with fresh blueberries and mint leaves.

Notes

Tip: To make the pudding more yellow add a pinch of turmeric powder ;)
