Quinoa Granola with Nuts

This homemade quinoa granola with nuts is exactly how I like it: crunchy, naturally sweet, a fine nutty taste and with a bite here and there. This sugar-free and naturally vegan quinoa granola is perfect for a good start to the day.

Ingredients
  

  • 150 g quinoa
  • 150 g rolled oats
  • 120 g nuts, roughly chopped (I used almonds and hazelnuts)
  • ½ tsp cinnamon
  • Pinch of salt
  • 100 ml agave or maple syrup
  • 50 g liquid coconut oil (alternatively I use canola oil)

Instructions
 

  • Preheat oven to 140 ºC on fan heating.
  • Combine all ingredients and stir together in a bowl.
  • Spread quinoa on a baking pan that’s laid out with baking paper.
  • Bake for about 60 minutes. Take out of the oven and let it cool while it’s still on the baking pan. 
  • Break the quinoa granola into junks. Optionally add dried raisins or roughly chopped other dried fruit. Fill into a jar or eat right away. Enjoy :)

Notes

Don't waste your taste serving suggestion: Take a glass and layer it on top of a fruit or a berry puree (I used blended cherries, but rhubarb and many others taste delicious as well in this combination) and some vegan yogurt.
