Colourful Couscous

This Colorful Couscous recipe is for you if you're looking for a meal that is done in no time but still brings lots of colour to your plate.

Cook Time 15 minutes
Cuisine Oriental
Servings 4 people

Ingredients
  

  • 250 g Couscous
  • 3 dl boiling water
  • 1 tsp vegetable broth powder
  • 2 tbsp olive oil
  • 1 large onion diced
  • 1 carrot diced
  • 1 bell pepper sliced
  • 1/2 fennel diced
  • Optional: garlic or any other veggies you've got around & wanna use
  • 1 tsp salt
  • 1 tsp cayenne pepper or more
  • Optional: Mint leaves coriander/cilantro, pomegranate seeds

Instructions
 

  • Boil water, add vegetable broth powder. Pour over couscous. Let swell for 5 to 10 minutes.
  • In the meantime sauté onion in olive oil for a few minutes & then add veggies & spices. Fry for a few more minutes.
  • Add couscous to frying pan and combine.
  • Top with herbs and seeds of your choice.
  • NJOY!
