Ingredients

ca. 300g cucumber peeled, deseeded & grated

100g coconut oil (or canola oil)
½
cup
125g applesauce

cups
250g flour (I used a mix of ray, spelt oat and wheat flour)

100g xylitol

flaxseed meal

cinnamon

tsp
nutmeg
pinch
of salt

baking powder

baking soda

75g walnuts chopped (or any other nuts)
Instructions
Preheat oven to 180 degree celsius.
Combine dry ingredients in a bowl.
Grate cucumber or process for a few seconds in blender (I use the Monsieur Cuisine cooking machine).
Add applesauce and rest of liquid ingredients to the cucumbers and stir.
Mix moist and dry ingredients together and pour into bread pan.
Bake for 50-60 minutes.
