Vegan Cucumber Nut Cake

Yes I did it! The seemingly impossible! Cucumber in a sweet dish. This experimental sugar free vegan cucumber nut cake can delight your tastebuds as a dessert, breakfast or snack.

Cucumber in a Dessert!?

How on earth did I come up with that idea?
Well, it all started with a basil cucumber coco cotta which I created at a cooking event with my colleagues from my university.
That was the first time I tried out cucumbers in a dessert. What an extraordinarily exciting process. After that I decided to develop an other cucumber dessert recipe.
Just for the thrill of it ;P

And tadaaa… here it is!

Sweet Cucumber Bread Cake

Sugar-Free aka Refined Sugar Free

I experimented quite a lot with different sweeteners and found that there are many different natural sugars that are healthier than the typical white refined sugar. I also found out that for this recipe Xylitol or and organic all-purpose stevia blend works very well because it doesn’t disturb the taste of the delicious spices in this cake.

Cucumber Nut Cake

This sweet cucumber nut cake can serve you as a breakfast, snack or dessert.  
Prep Time 1 hour 15 minutes
Cook Time 1 hour 50 minutes
Total Time 2 hours 5 minutes

Servings 15 -20 slices

Ingredients
  

  • 1 cup ca. 300g cucumber peeled, deseeded & grated
  • ½ cup 100g coconut oil (or canola oil)
  • ½ cup 125g applesauce
  • 2 cups 250g flour (I used a mix of ray, spelt oat and wheat flour)
  • ½ cup 100g xylitol
  • 2 tbsp flaxseed meal
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • pinch of salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup 75g walnuts chopped (or any other nuts)

Instructions
 

  • Preheat oven to 180 degree celsius.
  • Combine dry ingredients in a bowl.
  • Grate cucumber or process for a few seconds in blender (I use the Monsieur Cuisine cooking machine).
  • Add applesauce and rest of liquid ingredients to the cucumbers and stir.
  • Mix moist and dry ingredients together and pour into bread pan.
  • Bake for 50-60 minutes.
  • NJOY
