Vegan Elderflower Pancakes
The following recipe is for vegan elderflower pancakes that taste great for breakfast, as a snack or a dessert. They also might be the icing on the cake at the next brunch with your friends or family!

alternatively use gluten-free flour mix or/and buckwheat flour

coconut sugar
or dry dates powder

or other vegan milk

apple cider vinegar

Instructions
In a bowl mix dry ingredients (flour, baking powder, baking soda, salt, cinnamon) and then add oat drink and apple cider vinegar and stir well.
In a frying pan heat up canola oil. Pour 1-2 Tbsp of the batter into the hot oil.
Right after place 1 elderflower on each pancake.
Cut of the stems of the elder flower with a scissor.
Flip pancake as soon as the bottom is golden brown. On the other side fry till golden brown as well.
Serve with toppings of your choise e.g. unsweetened apple sauce, vegan joghurt or molasses.
Notes
If elderflower is not in season just leave it out or replace with fruit pieces or berries of your choice.
For the gluten-free version I prefer to use gluten-free flour blend and buckwheat flour. Ideale mixed fifty-fifty.
