As promised here comes an other seasonal recipe with apples. This time in combination with celery. Here comes an apple celery salad recipe. They are such a lovely couple.
This delicious sweet and earthy salad is super easy to make. It tastes sweet and earthy.

Uhm… Yeah I admit… I kind of stole this recipe…
I remember my Dad used to make celery salad with mayonnaise and still does when I’m not around. But when I went vegan almost 3 years ago he came up with the idea to use coconut milk in the salad sauce. This was quite surprising to me because until then I didn’t see my Dad experimenting in the kitchen too often. But he was really proud of himself to have made such a delicious salad and so was I. And it tasted amazing. To be honest it always tastes better when I eat it at my parents place when my Dad made it. I guess that’s the extra portion love he puts in.
He sometimes also makes the salad with fresh pineapple instead of apples. But since I’m eating only local and seasonal fruits and veggies this year during fasting season I’m showing this recipe with apples. But I guess if you’re living in an area where pineapples are is in season go ahead & substitute the apple with some pineapple.
Apple Celery Salad
Ingredients
- 200 g celery
- 2 small or 1 large apple
- 4 tbsp coconut milk
- 3 tbsp apple cider vinegar alternatively use a different vinegar or lemon juice
- 1 tbsp canola oil
- 1-2 tsp mustard
- pinch of salt
- 80 g walnuts
Instructions
- Peal and grate celery & place in a salad bowl.
- Cut apples into small cubes and add to the bowl.
- Prepare salad sauce by combining and mixing coconut milk, vinegar, oil, mustard and spices together.
- Pour salad sauce over the celery and apples and mix all together.
- Serve and ENJOY 🙂
