Fast, easy and sugar-free
Lemons are extremely fresh and a lemon pudding for dessert is light and wholesome. My recipe for an easy vegan lemon pudding works without refined sugar because I use stevia instead. Stevia is not artificial, but a plant native to South America, where it has been used in cooking for many centuries for its sweetness. It is the Stevia plant’s leaves that contain the sweetness. Stevia is also known under the name candy leaf, sweet honey herb or sweetleaf. It is about 100 to 300 times sweeter than household sugar.
Stevia is almost calorie-free and has no negative effect on blood sugar levels. Thus, you can serve your delicious, refreshing lemon pudding to calorie-conscious visitors. A little tip: Should you like the color of the pudding a bit more yellow and intense, simply add a pinch of turmeric powder.
Easy Vegan Lemon Lemon Pudding
Ingredients
- 400 ml coconut milk
- 200 ml soy drink
- 3-4 Tbsp Stevia sugar
- 80 ml lemon juice freshly squeezed from 2 lemons
- 50 g corn starch
Instructions
- Mix all ingredients in a pot. Heat up while stirring and bring to a boil for a few minutes.
- Let the cream cool down slightly before serving with fresh blueberries and mint leaves.
