Vegan Apple Cinnamon Rolls

Selfmade vegan apple cinnamon rolls with cardamom. Who could ever resist? They contain zero refined sugar and no palm oil. The cardamom goes really well together with the caramel taste of the coconut blossom sugar, the cinnamon and the apples and makes every christmas heart beat faster.

Kneading yeast dough the easy way!

Are you also the type of person who doesn’t like kneading dough too much? I have to admit that I personally always hesitate a bit when I have to knead a dough. Once I’ve started, it usually becomes fun eventually, and the kneading action is a nice little workout for the muscles of the hands and arms. But on those days where I can’t overcome my hesitation and/or need to make something fast, I’m super glad to have my Mouli take on all the kneading for me. (Mouli is my food processor with cooking function, the Moulinex i-Companion xl.) I simply put all ingredients in the pot, select the right settings (as explained in the recipe), and my Mouli does the rest. First it kneads, stops on its own, and even creates the perfect temperature for the yeast dough to rise in the pot. Isn’t that genius!? The special thing about it is that it’s a very fast recipe, since you just skip the step of letting the dough rise, respectively, letting the dough rise in the oven at 50°C before upping up the temperature and baking them.

Vegan Apple Cinnamon Rolls with Cardamom

Selfmade vegan apple-cinnamon rolls with cardamom. Who could ever resist? They contain zero refined sugar and palm oil. The cardamom goes really well together with the caramel taste of the coconut blossom sugar, the cinnamon and the apples and makes every christmas-y heart beat faster.

Servings 15 -20 cinnamon rolls

Ingredients
  

For the dough

  • 500 g flour 300g white spelt flour 300g, 200g whole grain spelt flour
  • 22 g fresh yeast (alternatively use dried yeast)
  • 1-2 Tbsp coconut sugar alternatively whole cane sugar
  • 1/2 tsp salt
  • 60 g coconut oil hard, not liquid
  • 2,5 dl oat milk alternatively rice or soy-rice drink

For the stuffing:

Instructions
 

  • First slightly heat the oat milk. It should be just warm enough for you to be able to put in your finger for a few seconds without it getting uncomfortably hot.
    Then  mix with the fresh yeast and add the coconut blossom sugar. Now let sit for 10 min.
  • Add spelled flour, salt and solid coconut oil and knead to a dough. Ideally you let a food processor help you with this. Then, let sit in a warm place for 40 mins.
  • After the dough has risen, pre-heat the oven to 180°C.
    Now grate the apples for the stuffing.
    Then combine with the coconut  sugar, optionally ginger powder, cinnamon- and cardamom powder.
  • Halve the dough and roll out the first half on a floured surface to a 1cm thick square. First add half of the hazel nuts, then half of the stuffing. Roll up sideways and cut into 5cm thick snails. Place them into a baking form (fatted with coconut oil). Repeat the same steps with the other half of the dough.
  • Bake in the oven for 25-30 mins.
  • Before serving, put powdered sugar from Xylit or Erythrit, agave syrup or rice syrup on top.

Notes

You can replace the spices as you wish. If you want the rolls to be more juicy, you can use even more apples than suggested in the recipe.
