During a recent walk, the delicate scent of elderflowers rose to my nose. They are ripe now and in June. Use the white flowers to make fine tea, syrup or jam. The following recipe is for vegan elderflower pancakes that taste great for breakfast, as a snack or a dessert. They also might be the icing on the cake at the next brunch with your friends or family!
Gluten-free, sugar-free vegan Elderflower Pancakes
Make this recipe gluten-free simply by replacing the flour with a gluten-free flour blend.
Vegan Elderflower Pancakes
Equipment
- bowl and whisk
- frying pan
- scissor
Ingredients
- 150 g whole wheat flour (or spelt) alternatively use gluten-free flour mix or/and buckwheat flour
- 1 TL baking powder
- ½ TL baking soda
- 1 pinch salz
- 1 pinch cinnamon
- 1-2 Tbsp coconut sugar or dry dates powder
- 200 g oat milk or other vegan milk
- 1 TL apple cider vinegar
- 3 Tbsp canola oil with butter flavour
- 5-6 pieces of elder flower
Optionale Toppings
- 4 Tbsp apple sauce (unsweetened)
- 2 Tbsp vegan joghurt
- 1 tsp molasses or maple syrup
Instructions
- In a bowl mix dry ingredients (flour, baking powder, baking soda, salt, cinnamon) and then add oat drink and apple cider vinegar and stir well.
- In a frying pan heat up canola oil. Pour 1-2 Tbsp of the batter into the hot oil.
- Right after place 1 elderflower on each pancake.
- Cut of the stems of the elder flower with a scissor.
- Flip pancake as soon as the bottom is golden brown. On the other side fry till golden brown as well.
- Serve with toppings of your choise e.g. unsweetened apple sauce, vegan joghurt or molasses.
Notes
- If elderflower is not in season just leave it out or replace with fruit pieces or berries of your choice.
- For the gluten-free version I prefer to use gluten-free flour blend and buckwheat flour. Ideale mixed fifty-fifty.
Yes. Just substitute the whole wheat flour (or spelt flour) with 1/2 buckwheat flour and 1/2 gluten free flour blend.
You can leave out the elderflowers or substitute with any berries or fruit.
