Red Lentil Pizza Crackers

What a simple protein snack. I didn’t think it was so easy to make vegan protein crackers until I tried it out. And WOW!

I was so surprised by the result. SO I decided to try even more variations of protein crackers. I guess chickpea crackers will be up next. So, I advise you to stay on board 😉

But first let’s dig into this recipe.

Combine all ingredients in a bowl or blender

Red Lentil Pizza Crackers

A tasty protein snack. Perfect as an appetizer at the next party.

Ingredients
  

  • 1/2 cup 100g dry red lentils
  • 1/4 cup water
  • 1/3 cup 90g tomato sauce or canned tomatoes
  • 1 tbsp olive oil
  • 1/4 cup 15g nutritional yeast flakes
  • 1-2 tbsp dried Italian spices oregano, basil, rosemary, thyme

Instructions
 

  • Grind dry lentils into flour. (If you have a high performance blender like a "Monsieur Cuisine", "Vitamix", "Thermomix" etc.) Alternatively use lentil, chickpea or bean flour, it works just as well for these protein crackers.
  • Mix all ingredients including the lentil flour in a bowl.
  • Spread on parchment paper.
  • Bake at 180°C (350°F) for 15 minutes. Then flip and bake for 10 more minutes. Once the crackers are dry they're done. Cut into shape of your choice.
  • ENJOY.

Notes

I cut the lentil cracker into triangles after baking to make them look like little pizza slices. Experiment with toppings and dips for these crackers. I thought they might go well with a guacamole or sour soy cream dip.

  1. I love this recipe. I’ve made it multiple times. Today, I tried something different. Instead of tomato sauce, I added 1/4 cup white vinegar. And instead of italian seasoning, I added 1/2 teaspoon salt. I never add the oil as I don’t use oil in any of my cooking. My family loves my homemade version of salt & vinegar crackers. They came out perfect. Thanks for sharing your awesome recipe!!
