Hearty pizza-muffins – they’re vegan, extremely yummy and the perfect snack to bring to a party!
Spice matters!
As a food blogger I’m always on the lookout for good products that I can introduce to my readers. It’s important to me that I only suggest products that I personally actually like, use and can stand behind 100%.

Or would you rather have a “real” pizza?
Well, it can’t really be called traditional, but it’s tasty nontheless! Do you know my Pizza mit Kürbis und Cashewsauce yet? If it’s not pumpkin season, you can replace the pumpkins with any other vegetable you like. Personally I really like pepper, spinach and artichoke on pizza.

Hearty Pizza-muffins
Ingredients
Fry:
- 1 Tbsp olive oil
- 100 g smoked tofu
- 1 big onion 100g, finely chopped
Dry ingredients:
- 270 g wholemeal spelled flour
- 2 Tsp baking powder
- 1 Tsp Alp salt or depending on your taste
- 2 Tsp Mamma Italia - Italian spice
- 1/2 Tsp black pepper or depending on your taste
Rest of ingredients:
- 2 Tbsp tomato paste
- 3 Tbsp olive oil
- 3 Tbsp soy yoghurt
- 300 ml water
- 60 g olives from the jar
- 50 g dried tomatoes
Instructions
- Preheat oven to 180°C, circulation
- dice onions and smoked tofu and fry both in a pan with a little olive oil for 7 minutes. Take the pan from the stove and put away for now.
- Quarter the olives and cut the dried tomatoes into little pieces.
- Mix the dry ingredients in a bowl.
- Mix tomato paste, olive oil, soy yoghurt and water in a little bowl, add the dry ingredients and knead to a dough.
- Add olives, dried tomatoes and onions with the smoked tofu to the dough.
- Put the dough in baking forms or into a glazed muffin form.
- Bake in the oven for 30 minutes.
